If the whole country decided to have a vegetarian Christmas, what would you suggest so that no one would miss the poor turkey?

I think aubergine parmigiana is always lovely- baked aubergine in mozzarella. A nice dish is pumpkin and lentils cooked with bean curd. You could do braised vegetables, such as parsnips and carrots with garlic.
